Healthy Hollandaise Sauce

I LOVE eggs Benedict...I mean, who doesn't on a Sayurday morning? And I always find Saturday morning to be hard because it's the time during the week we aren't rushed as a family in the morning so I like to those "more exciting" breakfast!

So here it is...my "healthier" version of Hollandaise Sauce💕✌🏼️

Ingredients:
1/4 cup plain Greek yogurt
2 tbsp lemon juice
1 large egg yolk
3 tbsp organic butter, melted
Himalayan salt and pepper to taste

Directions:
1. Fill a large saucepan 1/4 full and bring to a boil. Place a heat resistant bowl onto the top of the pot that fits snugly like a lid.
2. In the bowl, whisk together yogurt, lemon juice and yolk. Add salt & pepper.
3. Stir mixture consistently for 5 minutes or until your sauce starts to thicken.
4. Remove from heat and whisk 30 seconds. Return to pot for 30 seconds, remove 30...repeat this step until your sauce reaches consistency of mayo.
5. Remove from heat. Add butter and stir consistently for 3-4 minutes or until cooled.

One servings = 2 tbsp.  pour your sauce over eggs & tomato on toast or use as a sauce for fish.

DIY tub organizer

We moved into the new house and for some reason my tub toy holders wouldn't suction to the tile!

Here is a frugal, easy way to make a tub toy organizer yourself!!

-$10 shower curtain
-$2 hooks from dollar store
-$1 baskets from dollar store

Extend shower curtain across tub, hang hooks over the bar, add baskets & toys!!  I used S-shaped hooks, they seemed easiest to hang baskets from.

And to my surprise after tub was over last night, B had put all her toys away into her new baskets!! BONUS!

Sriracha Chicken Cobb Salad

I'm not the hugest fan of plain salads so I only make fancy, hearty ones when I make them! I had ALOT of veggies I needed to use in the fridge so here is what I came up with!!

Sriracha Chicken Cobb Salad

Ingredients:
-Spring mix (or chopped romaine)
-Whatever veggies you like! I used tomato, red peppers and mushrooms
-artichoke hearts, chopped
-avocado, chopped
-black beans
-pine nuts
-2 chicken breasts, chopped finely
-1/2 tbsp olive oil
-organic Sriracha (I only use organic to avoid salt, sugar & sulphites!)

Directions:
1. Cool chicken in non stick pan. Add salt  & pepper to taste. Add olive oil and Sriracha and toss to cover.
2. Add your salad goodies to a large bowl and mix!
3. Add to plate, top with chicken & a tbsp of your fav dressing 💕

Why I became a WAHM

I have changed ALOT over the past 3 years but one thing has completely remained the same...my WHY.
.
3 years ago, with a new baby, I was wondering where my money for groceries would come from, how I would buy diapers, how I provide for my new family.  I took the last $20 out of my bible to buy staple food items and thought to myself "right on, KC, how the hell are you going to sneak out of this one". I dreamt of living a life of travel, education, opportunity, healthy relationships...I knew I needed a BIG change but had no idea what where to start.
.
I knew I was out of control, my life in downward spiral. I felt lost, broke & broken, at 22 before my life was even "starting". BUT I knew the one thing in my life I still had FULL control over was my health. This is something I seriously struggled with both physically & emotionally for a very long time. I knew if I could get that under control, I would have enough drive to fix the rest of my toxic life. I set out on a mission to change my life from the inside out.
.
After losing 40 pounds all by myself, I realized something...doing this alone wasn't as fun as I had hoped & the lack of motivation was always sneaking up on me.  THIS is where coaching came into my life. A BIG reason I became a coach was to hold myself accountable and ultimately show others what is possible! I want to someone to say because of my hard work they didn't give up!
.
Because of this movement, I found an opportunity for me to:
-put Brodilynn at the enter of my life. Not work, not a schedule, not a obligations. She came FIRST & I built the rest of my life around that.
- something to keep me motivated with my health &I fitness journey and connect with other women who are seeking the same.
-create a life by design. I call the shots...whatever, whenever, however. NO ONE determines our possibilities.
- financial freedom...this is something 3 years ago seemed like a joke to me. I was a HUGE skeptic!
- create an outlet for my PASSION. I never wanted someone to tell me my dreams were too big or my ideas weren't fabulous!
.
My Favorite part of this is Brodilynn sees my making my own dreams come true...and let me tell you, when I tell her she can have ANYTHING she dreams out of life, she will believe me & see it in action.
.
Turning a Dream Into a Plan has been an incredible journey for me...what I love more about this is paying it forward. Listening to the goals of women just like me and helping them make it reality!! Your dreams aren't too far out of reach, you just have to start reaching. I made myself a promise 3 years ago I would turn my life around & help others do the same...here I am doing exactly that.
.
The possibilities are endless. The friendships are priceless. The freedom is inexpressible.
.
Will you start living your dreams? Or are you going to let opportunity pass you by??
