Healthy Beef Enchiladas


Ingredients:
• 1lb Ground Beef (or Turkey)
• 1 Onion, chopped finely
• 4 Carrots, finely chopped (I got my FAVORITE chopper here)
• 10 small/medium whole wheat Tortillas
• 1.5 cup shredded cheddar or mozzarella 
(Enchilada Sauce)
• 2 tbsp Olive Oil
• 2 tbsp whole wheat flour
• 4 tbsp Chili Powder
• 1/2 tsp Garlic Powder
• 1/2 tsp Ground Cumin
• 1/4 Dried Oregano
• 2 tbsp tomato sauce (optional)
• 2 cups chicken or veggie stock

Directions:
1. Brown your meat and add onions, carrots. Cool until soft.
2. While meat is cooking, make sauce. Add oil and flour to small saucepan. Add all spices and cook in med for 2 minutes, stirring frequently. Slowly whisk in chicken stock and tomato sauce. Cook sauce for 10-15 minutes, until slightly thickened (your sauce won't get thick, it is meant to be quite runny)
3. Preheat oven to 350. Grease 9x13 pan.
4. Once sauce and meat are done, you'll make your roll ups. Add a little sauce to the tortilla and spread around. add 1/2 cup meat mixture, roll tortilla up tight and place in pan. Repeat until you've used all 10 tortillas or your pan is full.
5. Cover with remaining sauce. Sprinkle with cheese.
6. Bake uncovered for 20 minutes.

Creamy Parmesan Herb Mushroom Chicken


Your family WILL inhale this entire dish! It's a quick, 30 minute dinner and so delicious you don't need a rich starchy side dish.

Creamy Parmesan Herb Mushroom Chicken

Ingredients:

๐Ÿ’‹ 6 boneless skinless chicken thighs, can also use breasts (salt and pepper)
๐Ÿ’‹ 1 tbsp Coconut Oil
๐Ÿ’‹3 garlic cloves minced
๐Ÿ’‹ 1 tbsp each fresh thyme, basil, oregano,  chopped
๐Ÿ’‹ 2 cups mushrooms, sliced
๐Ÿ’‹ 1 cup coconut milk
๐Ÿ’‹½ cup chicken broth
๐Ÿ’‹ 3/4 cup grated parmesan cheese

Directions:

In a large skillet add 1/2 tbsp coconut oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

Add .5 tablespoons oil and melt. add garlic, fresh herbs and mushrooms. Saute for 1-2 minutes. Add the coconut milk, chicken broth, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add chicken back in and coat. ๐Ÿง€✌๐Ÿผ

Turkey & Wild Rice Casserole

It's the perfect leftover meal from Thanksgiving when you can't imagine eating any more turkey! A casserole with no canned soup, no full fat creams or a bunch of cheese. Healthy, loaded with veggies & completely family friendly for those picky little (and big) eaters! 

๐Ÿ—Turkey & Wild Rice Casserole๐Ÿ—

Ingredients:
- 1.5 Cup Cooked Turkey Leftovers
- 2 Cups Cooked Wild Rice
- 1.5 Cup mushrooms, chopped
- 3 Celery stalks, chopped
- 1/2 Onion, chopped
- 3/4 cup frozen Peas 
- 1 Cup Chicken or Turkey Bouillion (I use better than bouillion organic brand)
- 3 tbsp Whole Wheat flour
-1 tbsp coconut oil
- 1 tsp garlic powder
- 1/3 cup shredded Parmesan 
- 1/4 cup whole wheat Panko Crumbs

Directions:
1. Preheat oven to 375.
2. Heat coconut oil in large pan. Add onion, mushrooms, garlic, celery and cook for 5 minutes or until mushrooms are browned. Add peas and turkey. cook another 5 minutes.
3. Sprinkle flour over veggies and mix (it makes a little paste). Pour chicken broth over and let simmer to make a sauce.
4. Put cooked rice into greased casserole dish and top with the veggies and sauce.
5. Sprinkle Parmesan cheese on top then the Panko crumbs. I have mine a light spray with olive oil spray to help the crumbs brown.
6. Put in oven uncovered for 30-45 minutes until it's warm through ๐Ÿ—

Banana Oat Pancakes


I'm pretty sure Pancakes are everyone top 5 FAVORITE breakfast food and always please the entire family! With my oldest starting Kindergarden tomorrow, I'm revving up for quick breakfast! <-- this one, make a double batch and freeze!! Pop in the toaster for a super quick breaky.

Banana Oat Pancakes

Ingredients: 

☀️1 cup Unsweetened Almond Milk
☀️2 Large Eggs
☀️1 large Ripe Banana 
☀️1 tsp Vanilla Extract
☀️ 1 tsp Baking Powder
☀️ 1/2 tsp cinnamon
☀️ 1 pinch Himalayan Salt
☀️ 2 cups Rolled Oats (gluten free)
☀️ Coconut oil for cooking

Directions: 

✨ Place all ingredients except coconut oil into blender! Blend until smooth. Heat skillet to medium-low and add tsp coconut oil. 
✨ Pour 1/4 cup of batter into skillet, cook 2-3 minutes or until bubbles form around edge of Pancakes. Flip and cook for another minute.
✨Continue with remaining battter (add a little more almond milk if it becomes too thick)

Cauliflower Pizza Crust






  • CAULIFLOWER PIZZA
  • CRUST

  • 1 head cauliflower, chopped
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan
  • 1 tbsp Italian seasoning
  • Himalayan salt &a pepper to taste

DIRECTIONS:


  1. Preheat oven to 425 degrees.  Line a baking sheet with parchment paper. 
  2. To make the cauliflower crust, add cauliflower to the bowl of a food processor and pulse until finely ground, yielding about 2-3 cups.* (I  h grated it with a cheese grater)
  3. Put in a microwave-safe bowl. Cover loosely and place into microwave for 4-5 minutes, or until softened; let cool.
  4. Using a clean dish towel or paper towel dry cauliflower completely, removing as much water as possible.
  5.  Stir in eggs, mozzarella, Parmesan and Italian seasoning; season with salt and pepper, to taste.
  6. Spread cauliflower mixture onto the prepared baking sheet. (Should be quite thin and cover the pizza sheet) Spray lightly with nonstick spray and bake for 12-15 minutes, or until golden.
  7. Top with pizza sauce, cheeses and pepperoni minis (or whatever toppings you choose!!) Place into oven and bake until the cheese has melted, about 3-5 minutes.
  8. Serve immediately, sprinkled with basil and red pepper flakes, if desired

One-Handed Snacks for New Mommas



I know you've got your hands full with that little bundle of joy!  Here are some healthy, Belly & Boobie friendly snacks to reach for when hungry strikes!

 1 Piece of Whole Wheat Toast topped with a slice of tomato and a tbsp of crumbled feta (140 calories)

 An apple, cut in half, scoop out the core and add a tsp of Peanut Butter to the middle of each (140 calories)

 1/2 cup Cottage Cheese with 1 cup of Fruit (160 calories)

 1 Cup Grapes with 3/4 Cup of Vanilla Yogurt (200 calories)

 8 baby carrots with 1/3 cup hummus (200 calories)

 2 hard-boiled eggs topped with himalayan salt & pepper (150 calories)

 1/4 cup granola in 3/4 cup vanilla yogurt (200 calories)

 1/2 cucumber, sliced and topped with himalayan salt & chili spice (100 calories) Add 2 tbsp dressing (50 calories)

 4 Slices low sodium deli turkey rolled up with 2 tbsp hummus and sliced peppers in the middle (200 calories)

 1/2 Banana rolled up in 1/2 Whole Wheat pita with 2 tsp Peanut Butter (270 Calories)
