Creamy Parmesan Herb Mushroom Chicken
Ingredients:
๐ 6 boneless skinless chicken thighs, can also use breasts (salt and pepper)
๐ 1 tbsp Coconut Oil
๐3 garlic cloves minced
๐ 1 tbsp each fresh thyme, basil, oregano, chopped
๐ 2 cups mushrooms, sliced
๐ 1 cup coconut milk
๐½ cup chicken broth
๐ 3/4 cup grated parmesan cheese
Directions:
In a large skillet add 1/2 tbsp coconut oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
Add .5 tablespoons oil and melt. add garlic, fresh herbs and mushrooms. Saute for 1-2 minutes. Add the coconut milk, chicken broth, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add chicken back in and coat. ๐ง✌๐ผ
