Italian Pork Chops


80 Day Obsession Recipe!!


Italian Pork Chops

Ingredients:

- 4 Pork Chops (I used boneless)
- 1 cup sliced mushrooms
- 4 Roma tomatoes (I also threw in a handful of cherry tomatoes I had wrinkling in the fridge), cut in quarters 
- 1 small onion, sliced
-1/4 dry white wine
- 1 tbsp coconut oil
- 2 cloves garlic
- 1/2 tbsp basil
- 1/2 tbsp oregano
- 1/2 tsp himalayan salt
- 1 tsp organic corn starch 
- black pepper to taste


Directions: 

1- Preheat oven 375. Heat oil on high in a frying pan, sear pork chops one minute each side until browned. Place into casserole dish. Sprinkle oregano, basil and salt over chops.
2 - While pan is still hot, add white wine and and garlic. Scape pan to remove all browned bits and mix with wine. Pour over chops.
3 - Top with mushrooms, onion and tomatoes. Sprinkle with a little more basil and cover.
4. Place in oven and cook for 45 minutes - 1 hour (depending on thickness of chops). Place on burner and turn on heat.
5. Remove from oven and place chops to one side.  Mix corn starch with a couple tsp of warm water and add to the sauce in the bottom of pan. simmer for 5 minutes to thicken. Remove from heat and let sit for 5 minutes.

I served this over brown rice but would be awesome on potatoes or pasta!

1 red, 1 green, 1tsp and 1 yellow if you have over rice

Jalapeño Apricot Pork Chops




Jalapeño Apricot Pork Chops

Ingredients:
• 4 Pork Chops
• 1/3 cup organic chicken stock
• 2 tbsp white wine
• 2 tbsp No Sugar Added apricot jam
• 1/3 cup unsweetened apple sauce
• 2 tbsp chopped jalapeño (fresh or pickled)
• pepper for taste

Directions:
1. Spray large pan or use coconut oil. Fry Pork Chops until no longer pink.
2. Add chicken stock and wine, stir and scrape the brown bits from bottom of pan. Cool for 5 min.
3. Add jalapeños, jam and apple sauce. Cook until sauce thickened (5 minutes)

Creamy Parmesan Herb Mushroom Chicken


Your family WILL inhale this entire dish! It's a quick, 30 minute dinner and so delicious you don't need a rich starchy side dish.

Creamy Parmesan Herb Mushroom Chicken

Ingredients:

💋 6 boneless skinless chicken thighs, can also use breasts (salt and pepper)
💋 1 tbsp Coconut Oil
💋3 garlic cloves minced
💋 1 tbsp each fresh thyme, basil, oregano,  chopped
💋 2 cups mushrooms, sliced
💋 1 cup coconut milk
💋½ cup chicken broth
💋 3/4 cup grated parmesan cheese

Directions:

In a large skillet add 1/2 tbsp coconut oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

Add .5 tablespoons oil and melt. add garlic, fresh herbs and mushrooms. Saute for 1-2 minutes. Add the coconut milk, chicken broth, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add chicken back in and coat. 🧀✌🏼

Cheeseburger Burrito


Cheeseburger Burritos....because I was craving a cheeseburger but for a little too lazy to make patties! So I wrapped em up and make something even more delicious!

Ingredients:
1 lb of lean ground beef (or turkey)
Whole wheat wraps
1tsp Garlic Powder
1tsp Onion Powder
1tsp Himalayan salt & pepper 
Shredded cheese
Whatever you like on your burgers! <-- I used pickles, mustard, tomato and purple onion. (Dont use lettuce as it will wilt when you grill) GET FUNKY!!! Think grilled onions & mushrooms, bacon, avocado, ham....

Directions:
1. Brown ground beef in a skillet with salt, pepper, garlic and onion powder.
2. Put ground beef onto your wrap and top with cheese, mustard, mayo and your preferred cheeseburger toppings!
3. Wrap it up like a burrito and grill 💕

Sausage & Spinach Stuffed Shells



Nesting at its finest! I am in love with comfort food with this colder weather coming around, Brodilynn asked for lasagna & Andre LOVES pasta....so WINNER WINNER on this one! All 3 pasta dishes literally took me an hour to the table and freezer AND it was all under $30!! You cant beat this one <3 This meal is amazing for those people doing 21 Day Fix, Core De Force or any other color coded meal plan!! <--- and we ate the whole pan!! lol

Sausage & Spinach Stuffed Shells

I doubled this recipe and put into 3 - 9x9 baking dishes (one glass for supper tonight & 2 foil ones to freeze!)

Ingredients:

1 Package Large Shells (brown rice noodle variety is my favorite) <--- manicotti tubes would also work if you cant find big shells!
1 Lb Italian Sausage (remove from casings if you cant find ground sausage)
1 package (12 oz) frozen chopped spinach (thawed & squeezed)
1 cup Ricotta cheese
1/2 750g tub of Cottage Cheese
2 Eggs
1/2 cup Shredded Mozzarella
1 Tsp Garlic Powder
1 Tsp Italian seasoning
1 Jar Pasta Sauce (no sugar added - organic variety)
1/2 cup Shredded Cheese for topping (I used more mozzarella and a little parmesan)

Directions:

1. Preheat over to 400.
2. Cook the shells according to package directions, drain & let cool.
3. In a large pan, brown sausage. Remove from heat, cool & crumble.
4. In a large bowl, combine the spinach, ricotta, cottage cheese, eggs, mozzarella, garlic powder & spices. Add cooled sausage. Mix together.
5. Add a cup of pasta sauce to the bottom of a 9x13 baking dish. (or 3 9x9 dishes if doubling recipe to freeze)
6. Fill your cooked shells with mixture and place filling side up in the baking pan.
7. Top with cheese
8. Cover & Bake for 45 minutes.

FOR FREEZING:

1. In foil dishes, complete to step 7. Cover with foil & label "350 degrees for 2 hours from frozen"

Healthy Oatmeal Raisin Cookies


 I don't know if its this pregnancy or this rainy weather than is making me crave the smell of fresh baked cookies but either way oatmeal raisin it is!  One of the things I love so much about being a work from home momma is I have the ability to do this like this everyday with Brodilynn!  We always have so much fun in the kitchen together. She absolutely LOVES to bake, and she is actually REALLY good at it! haha Today she asked for Chocolate Chip, Raisin, Banana, Oatmeal cookies....here is what we came up with!


Oatmeal Raisin Cookies

*Makes 15 cookies*

Ingredients:

1 cup Quick Oats + 1 Tbsp
3/4 whole wheat flour (we used oat flour)
1 ripe banana
1/4 cup raisins
1/8 cup chocolate chips
1.5 tsp Baking Powder
1.5 tsp Cinnamon
2 tsp Vanilla
1/4 cup Raw Honey
3 Tbsp Coconut oil

Directions

1. Preheat your oven to 325.
2. Add all dry ingredients to a large bowl (we use a stand mixer) and mix.  Add wet ingredients and mix well.
3. Grease cookie sheet, place a well rounded tablespoon dollop of cookie dough to cookie sheet. Bake for 11-14 minutes. Let cool for 10 minutes before removing from cookie sheet!

Cleaning Out Your Pantry



One of the first things I have all of my Inferno Challengers do is CLEAN OUT YOUR PANTRY!  Honestly, I am guilty of this too! Cookies, processed foods, cereals, sugar and other things make their way into your house.  Before you start your health journey, the best thing to do is rid your house of all the temptations & retrain your body to look for the yummy healthy options!

How to Prepare your Pantry for Clean Eating! <--- 7 Steps!

1. Remove everything PRE-PACKAGED!

Cookies, instant mashed potatoes, granola bars, crackers, etc.  These all contain a mess of mystery ingredients from sugar to chemicals to unhealthy fat.

2. Remove everything containing SUGAR!

Flip it over and look at the ingredients...sugar? <---it needs to go! Sugar (sucrose) and high fructose corn syrup contain two molecules: glucose and fructose. Glucose is something the body produces itself and can break it down into energy. Fructose CANNOT be broken down by the body, gets sent to the liver as a toxin and the liver turns it into fat to protect the body from it. <-- This fat stays in your body!

3. Remove the fats!

Flip it over and look at ingredients..is there rapeseed (canola oil), soybean, corn, sunflower, safflower, peanut, or any other vegetable oils? <--It needs to go! These oils are processed in very unnatural and unhealthy ways! They are heated to very high temperature, changing their structure...not to mention GMO!!!  Use ONLY olive or coconut.

4.  Remove White flour, White Rice, White noodles!

The focus of cleaning out your pantry is to fill it with nutrient-dense foods that will help your body THRIVE!  White flour, white pasta, white rice have all been striped of their nutrients therefore become empty calories!  Remember what I said about sugar in the body, these are going to act the same way in the liver! <---Look for WHOLE WHEAT, multigrain, brown rice, and whole grains such as quinoa.

5.  Juice (not 100% pure juice) & Soda!

These need to go, for ALOT of reasons...they are processed, packed full of chemicals & toxins, they are full of sugar and basically send your body into a downward spiral.  These will effect your energy levels, your bodies ability to fight off disease, its ability to break down minerals and vitamins and put you and your family at risk of things such as heart disease & diabetes.

6. "DIET" or "LOW FAT" or anything else that sounds modified!

Truth is guys, when they "take something out" they add something else and I can guarantee its not something healthy!  I want you to understand something...there are food groups that are important to our bodies, FATS are one of them. Our body needs FAT to burn off fat! <---HEALTHY FAT!  Remember before when I said coconut oil and olive oil? Your body needs these! It also needs things like avocado, nuts and seeds!  Premade salad dressing, cheese and other things that generally say "low fat" have a lot more things going on with them than taking out a little fat...they use unhealthy, toxic oils, they add sugar, and a bunch of chemicals to make it look creamy and preserve it! <-- your body CANNOT process these! Instead, make your own salad dressings using olive oil and measure out 2 tbsp as a serving (your body loves these fats!) When buying cheese, get the full fat options and really limit your intake!  I always say, "low fat" means "toxic shitstorm"...just don't.

7.  Check your labels!

Is there something that sounds like a chemical? BYE. Is there something you cannot pronounce? BYE. Is there something with more than 10 ingredients? BYE. Is there artificial colors or sweeteners? BYE....use your instincts and ask yourself.. HAS THIS BEEN MAD MADE IN THE LAST 100 YEARS?? <--- REALLY LIMIT THESE!

Like I said before, this journey isn't about restricting your diet & being unhappy because you can't eat cupcakes (trust me, I love the odd cupcake!). this is about giving your body what it needs to THRIVE! Your body is an incredible machine! If you give it what it needs, it will run optimally. This means great sleep, great digestion, high energy, great skin/hair/nails, and weight maintenance. We are designed to feel incredible and ALOT of this is going to start with the fuel we are adding to our bodies!

Spicy Mediterranean Omlette

 

I am always on the search for yummy breakfasts that are low-carb, high protein!  This baby is PACKED with flavor and has 1.5 servings of veggies!


Ingredients:

1 cup egg whites
1 Roma or small tomato, diced
1 handful spinach
2 tbsp feta (not the gross low fat kind!)
Habanero Sauce (or hot sauce of your choice)

Directions:

1. Heat your pan and spray with cooking spray. When hot, pour in egg whites.
2. Put crumbled feta, then spinach, then tomatoes. Cook until eggs are firm.
3. Fold eggs over the ingredients to make the Omlette pocket and flip.
4. Cool another 3 minutes. Top with your spicy sauce and serve 💕👌🏼

***HELLO SEPTEMBER***

Ok...YES Summer was NUTS! Its was for me too! Travelling, Beach, Camping, Sugary drinks and Beer, BBQs, Late Nights...and along with these the "PERFECT" excuse...its too hot to eat, I'm too busy, kids out of school, out of town...I USED THEM TOO!!! Until you try and fit into your cute skinny jeans and they are TIGHT!

But guess what guys...SUMMER IS COMING TO AN END! And your excuses REALLY need to also!! <---you know I'm right ;) lol

So heres my plan:

30 minutes of workouts a day you can do right from home! These can be based on your currently fitness level, no need to have any experience! EVERYONE has 30 minutes...or i will find you 30 minutes ;)

A SUPER SIMPLE meal plan! <---I am a foodie so cutting cheese and wine is NOT an option, ill include these <3 and i also have a 3 year old to please (i DO NOT make 2 meals!) SOOOO for the meal plans, lets do some family friendly crockpot stuff, some comfort food, and some old favourites!! <---We aren't dieting, i don't diet...we are going to learn how to eat in proper portions and FUEL or bodies!!

Accountability and support is going to come from my VIP Exclusive Challenge Group right here on Facebook! I will post a daily assignment to keep you complete plugged in and motivated! Thai (Coconut) Curry Chicken



I LOVE CURRY! And Thai food! Unfortunately, the coconut milk and the fish sauce can leave this amazing dish a little on the unhealthy side! I decided to try a shot at this favourite dish making it lower in sodium, lower in fat, high in fiber, and still DELICIOUS!

Thai (Coconut) Curry Chicken

Ingredients

1 pound Chicken Breast, cubed
2.5 Cups Coconut Dream milk 
3 Tsp Curry powder
1 tsp Turmeric
1 tsp Himalayan Salt
1 tsp pepper
2 cloves garlic minced
2 peppers (yellow and red), sliced
1.5 cup Zucchini, sliced
2 cup Spinach
1 Tbsp Coconut oil

Directions

1.Heat coconut oil in large pan. Add garlic and stir for 2 minutes. Add chicken and brown.  While chicken is cooking add curry powder, salt, turmeric, and pepper to coconut milk and whisk together.

2. When chicken is cooked, pour curry mixture into chicken and simmer for 5 minutes.

3. Add all chopped veggies and cover for 5 minutes or until veggies and tender crisp.

4. Remove from heat and let sit for 5 minutes.

5. Divide into 4 servings Serve mixture over brown rice or cauliflower rice

Zucchini Pizza Boats






 Lunches have always been a tough one for me! I am such a creature of habit and I tend to go for the quickest thing I can find.  THESE babies though have made my staples list!  And they are toddler and 21 Day Fix approved!

Zucchini Pizza Boats

Ingredients
2 small zucchinis
Grape tomatoes
1/3 Cup cheese (I used shredded tex mex I had left over)
2 TBSP pizza sauce (I use an organic sugar free variety)
1 tsp olive oil
1 tsp minced garlic
1 tsp chopped basil (i use organics in a tube)

Directions:
* Preheat oven to 425*
1. Cut the zucchini in half length wise and scoop out the middle guts.
2. Mix together the olive oil, basil, and garlic.
3. Line a baking sheet with tin foil and coat with cooking spray.
4. Put the zucchini on the baking sheet, top with the oil mixture (spreading over zucchini evenly), then top with the pizza sauce.
5. Top the zucchini with the cheese, grape tomatoes cut in half and any other toppings you choose!
6. Bake them for 12 minutes (time may vary denoting on size of zucchini slices)

Parmesan Greek Yogurt Crusted Chicken




This chicken recipe is SUPER easy to make, and a big family favourite in our house!  Toddler, hubby and 21 day fix approved.  The topping is delicious and keep the chicken really moist.  This chicken goes really well with oven roasted baby potatoes and green beans.  The leftovers are great too.

INGREDIENTS

4 boneless skinless chicken breasts
1 cup plain Greek yogurt
1/2 cup Freshly grated parmesan cheese
1/2 tsp Himalayan Salt
1 tsp Garlic powder (i use minced garlic)
1/2 ground pepper
1/4 tsp cayenne pepper


Directions

1. Preheat oven to 375 degrees. Spray baking dish with non-stick cooking spray. 
2. Combine yogurt, Parmesan cheese, and seasonings. 
3. Spread over chicken breasts. Bake for 45 minutes, or until chicken is cooked through and topping is browned. Serve immediately.

1.5 red (chicken and yogurt)

Best Vegetarian Chili

 

It's officially comfort food season! This will always be my weakness.  I LOVE comfort food!  Unfortunately, most comfort foods aren't exactly the most friendly on your waistline.  BUT, good news for you! I am going to start posting my comfort foods made skinny!  Today's lunch:

Best Vegetarian Chili
Ingredients
1 tsp coconut oil
2 onions
1 green pepper
3 garlic cloves
2 cans no salt added stewed tomatoes, drained
1 can black beans
1 1/2 tsp cumin
1tbsp Chili powder
1/2 tsp Himalayan salt
1/4 tsp chipotle or cayenne
1 cup frozen corn
(I topped with a glob of plain low fat greek yougurt)
 
1. Heat oil in large saucepan and add onions, green peppers, and garlic.
2. Add cumin, Chili powder, salt and cayenne. Cook 1 min.
3.Stir in beans and tomatoes.
4. Let simmer and cook down for 20-30 minutes.
*makes 4 servings*
 
Inferno Tips:
  • Add ground 1.5 pounds ground turkey or chicken for more protein!
  •  Make extra and freeze in baggies for meal prep!

Broccoli & Cheddar Stuffed Chicken

Who doesn't love stuffed chicken breast??  These Cheddar Broccoli Stuffed Chicken Breasts were a huge hit for the whole family, even the picky 2 year old!  I remember when I was little LOVING those frozen stuff chicken breasts but I'm positive they aren't good for you! Here is a quick, healthy solution for you!  They also make wicked leftovers!

Broccoli Cheddar Stuffed Chicken Breasts
 
Ingredients:
4 Chicken Breasts (mine were quite small)
1 1/3 cup shredded cheddar (I threw in some mozzerella I had also)
2 cup frozen broccoli (or steamed fresh)
1/4 tsp both Himalayan Salt & pepper
1/2 tsp each minced garlic, onion powder, and cayenne
3/4 cup cottage cheese



Directions:

Preheat oven to 350 F.  Chop your steamed or thawed broccoli into small pieces and set aside.
Take your chicken breast, place on wax paper and place saran wrap over the chicken.  Flatten with mallet until about 1/2 inch or thinner.
In a bowl, mix together shredded cheese, cottage cheese, spices and broccoli.  Section the mixture into 4 equal part and make each section into a loose ball with your hands.  Place the ball in the center of the chicken breast and roll the chicken breast around the mixture, tucking in the ends so all of your cheesy goodness doesn't escape!  Place the opening side of the chicken down to keep it secured while cooking.
Place all 4 stuffed chicken breasts onto a cooking sprayed, tin foiled baking sheet.  I sprinkled the top of mine with Seasoned Herb Medley or Mrs. Dash but any non salt seasoning would be great!
Place the chicken breasts into the oven for 25-30 minutes.

      Team Beachbody Canada officially launched!

      Wanna know why I didn't sleep a stitch last night and can't sit still this morning?  This just got REAL! That's why...Beachbody has OFFICIALLY launched here in Canada! I know, your like "what are you talking about? You have been a coach ...for a year and a half??" Well...for the past 22 months we have been in a "pre-launch". Our team worked our butts off, laid the foundation, made all the beginners mistakes and prepped like CRAZY for TODAY! We have created a family, a vision, a gameplan and BIG things are about to happen! The LONG wait is finally over! I am sooo happy to introduce to you, TEAM BEACHBODY CANADA, LLC!!

      What does this mean? Every single Thursday our cheques are directly deposited into our bank accounts, and our much loved products like P90X, 21 Day fix, Insanity, Turbofire, SHAKEOLOGY and many others are officially APPROVED by Health Canada and the Canadian Government (something to be proud of, they are damn sticky up here!)

      Honestly though, that's not what is important to me...what's important is the SOLIDITY. We are absolutely here to stay! The company who is closing in one a BILLION DOLLARS in yearly sales in officially GROUNDED into Canada. Our coaches are legit, we WILL create financial freedom in MANY lives in Canada, help those we care about the most create their very own life of design..and ALOT easier than we did haha, we had to work out all the kinks to get here!

      Coconut Curry Chicken Soup

      I was feeling a little under the weather today with a bit of a cold coming on.  It was also raining and a PERFECT day for a spicy soup.  My favorite soup is Coconut Chicken Curry soup but its always packed full of calories, sugar and chemical additives.  I decided to give it a go! I will definitely be making this again!  Now only if my husband loved curry as much as I do!

      Coconut Chicken Curry Soup                        
      1 tablespoon coconut oil                               
      1/4 cup thinly sliced shallots                               
      2.5 teaspoons red curry paste                               
      3 teaspoons curry powder
      1/2 teaspoon ground turmeric
      1/2 teaspoon ground coriander
      2 garlic cloves, minced
      6 cups low-sodium chicken broth
      3 cups fresh spinach leaves                               
      1/2 pound snow peas, trimmed and cut in half crosswise       

      1 (13.5-ounce) can light coconut milk                               
      2 1/2 cups shredded cooked chicken breast (about 1 pound)   
      1/2 C. chopped green onions
      1 Tbsp Powder Stevia (truvia)
      2 Tbsp Fish Sauce
      1/4 tsp red pepper flakes
      1/2 tsp himilayan salt
      1/2 cup chopped fresh cilantro (optional)             

      Directions:
      Heat coconut oil in pan over medium-high heat.
      Add shallots and the next 5 ingredients (through garlic) to pot; sauté 1 minute, stirring constantly. Add chicken broth to pot, and bring to a boil.
      Add coconut milk to pan; reduce heat, and simmer 5 minutes.
      Add chicken, onions, stevia, and fish sauce to pot; cook for 2 minutes.
      Stir in cilantro and chiles. Serve with lime wedges.
      1 cup serving:
      150 calories
      3.5g fat
      15g protein
      15g carb
