Squash Carrot Curry Soup



 

Fall is in the Air!! Yes this is absolutely my FAVORITE time of year!!  One of the reasons being I get to put my recipe making passion to work! I love fall/cool weather food! I love the root veggies &a warm colours 😍🍂 can you tell I'm addicted?!

Today was a soup day! I had a few veggies I needed to use up in the fridge (I NEVER let veggies go bad, they always end up in a soup or stew!) and I also have an overload of carrots coming along in my garden! So be prepared for a few carrot recipes in the near future!!

I love this recipe because not only is it an awesome fall soup BUT the veggie content & the turmeric make it a great detox soup 💕

🍂Squash Carrot Curry Soup🍂

Ingredients:
1 onion, chopped
1/2 summer squash...or butternut or a whole acorn or whatever squash you've grown!
5-6 carrots
6 cups chicken or veggie stock (I always use better than bouillon)
4 garlic cloves
1/2 cup white wine
1 tbsp coconut oil
1 tbsp organic curry powder

Directions:
I use a Tupperware chopper! If you don't have one, HIGHLY RECOMMEND! <-- I use at least 3 times a week for chopped salads or soups or meal prep... AMAZING!

1. Heat coconut oil in a large pot. Chop all veggies & add to pot, sauté for 3 minutes. Add curry powder & garlic. And cook for another 5 minutes, stirring frequently.

2. Add chicken stock & white wine and simmer for 20 minutes. 

3. Use a hand held blender to purée your soup. If you don't have one, a stand blender is fine BUT make sure your soup has cooled before blending or it will EXPLODE!

**if you have zucchini, it would be great in this soup too!!

Art of Self-Love


That extremely tired momma face that greets the day saying.."don't worry gorgeous, you got this!" 

It's moments like this the truly show me how far in this self-love, self-acceptance, personal growth game I've really gotten 🎀

When my house is a mess (and one bedroom in Reno mode), I have 8584 adulting things I have been meaning to do, I haven't had a decent sleep in like 4 days (thanks pregnancy insomnia) and this eye twitch can beat it any day now....

Me, 3 years ago would have had 4 anxiety attacks by now, thrown a complete fit of overwhelmed and probably put myself back to bed.  It's a TERRIBLE cycle! Bad habits were so easy to pick back up when I was feeling weak, I LOVED my crutches...my food crutches, my smoking, that glass or 4 of wine...but truth is, it never really made me feel BETTER!

What does make me feel better is the tools I've learnt along the way in my journey of self-love & finding where my soul becomes alive 💕 I've learnt ways to treat myself with respect & put an end to the self distraction before it starts!  Pick yourself up, stand as tall as you can, 3 DEEP breathes, take a shower, throw on a little mascara, pull your shit together & get er done! Take care of the business that's eating your soul but MOST IMPORTANTLY, take care of YOU 😘

Yes...it's been a long, weird, awkward road to finding myself where I need to be! But here's some things I'm 110% sure got me to this place:
✌🏼️Morning workouts <-- they don't have to be long, they don't have to be complicated or use a bunch of equipment that gives you more anxiety than what you started with! Pick something simple, find some support &I DO NOT GIVE UP. Every.Single.Day
✌🏼️Fuel your body properly <-- I'm lazy & hate kale..I use a dense nutrient supplement because it works for me! Don't like gnawing green leaves, it'll work for you too. But whatever your route, give your body what it needs...trust me, if your depriving it of essential nutrients it NEEDS to thrive, it will HATE YOU. <-- when you body hates you, it will act like a bad 5 year old and throw fits. Welcoming illness, anxiety, depression, hormone imbalance, pain...you get it!
✌🏼️Breathe Deeply! NEVER underestimate the power of deep breathe! Bring it in for 5, hold for 5, out for 5, hold for 5...5 times! <--- try it and tell me you still want to jump off the roof of your house 😉
✌🏼️Hug Someone...true story. Cuddle someone, kiss someone...it releases endorphines <-- they are free and feel so so good 💕 yes, your insane little white dog counts 🐶

YOU'RE STRONG! The human body is INCREDIBLE! Your mindset is more powerful than your imagine!  So tackle the first couple of items for your Body & Soul. Then look like the mirror and repeat "I am a Bad Ass Bitch. No one will EVER do ME better than ME and not shining to my full potential today would rob the world of everything I am and everything I aspire to be! I WILL SHINE TODAY!" ✌🏼️⭐️☀️ <--- you got this 😘

Healthy Oatmeal Raisin Cookies


 I don't know if its this pregnancy or this rainy weather than is making me crave the smell of fresh baked cookies but either way oatmeal raisin it is!  One of the things I love so much about being a work from home momma is I have the ability to do this like this everyday with Brodilynn!  We always have so much fun in the kitchen together. She absolutely LOVES to bake, and she is actually REALLY good at it! haha Today she asked for Chocolate Chip, Raisin, Banana, Oatmeal cookies....here is what we came up with!


Oatmeal Raisin Cookies

*Makes 15 cookies*

Ingredients:

1 cup Quick Oats + 1 Tbsp
3/4 whole wheat flour (we used oat flour)
1 ripe banana
1/4 cup raisins
1/8 cup chocolate chips
1.5 tsp Baking Powder
1.5 tsp Cinnamon
2 tsp Vanilla
1/4 cup Raw Honey
3 Tbsp Coconut oil

Directions

1. Preheat your oven to 325.
2. Add all dry ingredients to a large bowl (we use a stand mixer) and mix.  Add wet ingredients and mix well.
3. Grease cookie sheet, place a well rounded tablespoon dollop of cookie dough to cookie sheet. Bake for 11-14 minutes. Let cool for 10 minutes before removing from cookie sheet!
